Dulse Seaweed Chocolate Brownie Recipe

These are so rich and intoxicating. I tweaked this recipe from Simply Recipes. The Dulse seaweed is not noticed, and this ingredient gives a boost of nutrition. The almond extract gives an exotic flavor with the sweet chocolate still dominating as it should.

Ingredients:

10 T. Butter (I used  Smart Balance)
1 1/4 C. sugar (I used Brown sugar)
3/4 C. plus 2 T. unsweetened cocoa powder
1/4 tsp. salt

1 tsp. almond extract
1 tsp. vanilla extract
2 eggs
1/2 C. flour (I used bread, but all purpose will work)
about 1/4 C. Dulse Seaweed ripped or chopped into small pieces.
1/4 C. chocolate chips (I used semi-sweet) Or you can use chopped nuts of choice.(Opt.)

Pre-heat the oven to 325F with rack in middle or lower third position. (I had mine in the middle). Line the bottom and sides of an 8-inch square pan with parchment paper. Leave a bit overhang on at least two side to pull out later.

Combine butter, cocoa powder, sugar and salt in a medium bowl (glass or ceramic) and put over a pot to melt and mix in the double boiler fashion. You can microwave instead, if you like. Stir the mixture until smooth. My mix was kind of grainy, which is fine. Take the mix off the heat and let it cool a bit.

While the mix is cooling fill a 1/4 Cup. with  Dulse seaweed. Do not pack it in. Then take it out and chop or rip it into pieces, placing it back into the 1/4 C. I will give pictures for my words under the instructions so, you get the idea.

Now that your mix is not to hot, add the extracts and mix in. Now add the eggs one at a time mixing them in each time. The mixture will look shiny. Add flour and mix until fully Incorporated. Add the Dulse seaweed chopped and the chocolate chips or nuts. Mix. Pour into prepared baking dish and put into the pre-heated oven at 325F.

Bake until knife inserted into the middle comes out clean. Which was about 40-45 minutes for me. The original recipe said the bake time was 20-25 minutes. I think that incorporating the Dulse seaweed may have changed the way this brownies baked. Because it was a much longer and worth while baking time. Note that the chopped or broken up bits do not fill the 1/4 C. all the way. Which is fine. It filled about 80-90 percent to the top.

After adding the extracts and eggs one at a time. I have added the Dules and chocolate chips to mix in.

Poured into the prepared bake dish. Put into the oven.

Finished product.

Cut into small pieces because it is very sweet. This was a hit with my youngest son and husband. Store extra's in a sealed container in the fridge. I would heat a piece for 10 seconds in the microwave to eat. Oh yes, heavanly. And no one knows it has sea weed in it. Hee.

Brussel Sprout Soup Recipe

Lots of Brussel Sprouts coming out of my garden. What to do with them? Soup anyone? This soup recipe I found on BBCFOOD bbc.co.uk/food  I did change it to my liking, but it was great inspiration.

I have pulled out one plant and kept the tender leaves closer the top. They juice great. I think that they would be great saute'd or in soup to. The big bud on top I kept and will juice or use for some kind of eating. I took the big leaves and put them in the garden to mulch (although, I do hear they are good eating to). The stem went into the compost pile, but my dog took it and has been chewing on it all week. I guess she likes brussel sprouts to. Here is another one for her. Hee. Dog chew.


Ingredients:                Serves 3-4

1/2 lb onions sliced
1-2 T. Butter or oil
1/2 lb Brussel Sprouts halved
1 potato diced
Pinch of thyme
2 cups of broth (any kind and I am sure water would be just fine) I used beef broth.
salt and pepper to taste

Optional toppings:
Sour cream, yogurt, cream
paprika or cayenne pepper

Put onions in a pot with butter/or oil, saute' for about 5 minutes and then cover and steam for another five minutes. Then take the cover off and add Brussel sprouts, potato, thyme, salt, pepper and broth. Cover, bring to a boil and then lower heat to simmer for about 10-15 minutes. Blend with hand bender and then taste. Adjust seasoning if needed. Serve hot with topping of choice and some warm bread.

Onions looked and smelled good so, I added the bowl. I could of saute'd my onions more.

Added my broth. Now to cover, bring to a boil and simmer for 15 minutes.

Now it is looking good and done.



I topped mine with cayenne and ate the soup with one of my sour dough rolls. Very good. The soup was good with out any extras on top. So, perhaps some paprika next time. To make it look pretty or not.




Simple Fried Egg Burrito Recipe

O.K. Egg and Dulse Bacon burrito. The Fried Dulse is optional, but so good. Dulse fried tastes very much like bacon to me. It is a great bacon alternative. This is one of my favorite go to foods with or without the Dulse.

You need:
Butter or oil
egg
salt
Tortilla
Mayo

Optionals = Dulse, or Spinach (those are my favorites) You can use what you like for extra.

Just put some butter/or oil in a pan and heat it up. Add your egg and put your Dulse (if using) on the side of egg. you are frying both. Salt your egg.

I cook it over easy (Cook on one side until bubbly, then flip for just a bit and you're done). You can poke the yolk, if you prefer it cooked. I like it both ways.

Heat your tortilla on the stove. You can heat it on a gas stove at low-med. or on a large heated skillet and flip once or twice until desired warmth. Put it on a plate and add some mayo. Top with your egg and Dulse or other option of choice. This burrito is great with only the tortilla, egg and mayo. So if Dulse or other add ons are not in your kitchen or time is not on your side. Go with it as is and your tummy will still be pleased.

Roll it and eat. Yum....
