Chocolate Almond Coconut Date ball Recipe

What you need:

1 lb. or about 4 Cups of pitted Dates
1 Cup Almonds
1 Cup Coconut
1/2 Cup Cocoa powder

Put Almonds into food processor with blade and mix.


Now add pitted Dates, Coconut and Cocoa powder.

Blend again. Your machine may feel like it is struggling. So give it breaks or just pulse. Keep blending/or pulsing until it starts to look like this below.

Form into small balls with hands. If hands get to sticky wash and dry them, then continue rolling. I have to wash and dry my hands several times to roll them all smooth.

You can leave them this way or Take a bit of Coconut and Cocoa powder and roll them into this.


They look like Bon Bons. You could even dip them into melted Chocolate with toothpicks and cool them on wax paper in the Fridge. I did not do that. Put them into the freezer to become firm. Take out when serving or eat strait from freezer. They get firm, but do not freeze like ice. So it is a great cool treat, snack or dessert.

Refried Beans with Dulse Seaweed Recipe

Dulse fried is a good bacon replacement, so why not a bacon replacement in other recipes? I found that Dulse and refried beans are great together.

What you will need:

1 pound bag dry pinto beans
Water
1 tsp. Salt
1 tsp. Garlic powder
A handful of Dulse sliced (Estimate 1/2 Cup)

Start by taking your dry beans and putting them in a large bowl filled with 6-8 cups of water and let soak overnight. If you want to do the quick method just put them in a large pot, Add the water and bring to a boil. Then boil for 2 minutes and turn off heat. Let sit for 1 hour. These directions are straight from the bag.

Now drain the beans and place in large pot. Add 6 cups of water cover pot with lid and bring to a boil. Once it has reached a boil turn it down to a simmer for 1 1/2-2 hours. Add the 1 tsp. salt and 1 tsp. garlic powder and mix. I leave my lid on side ways so some steam escapes and the pot does not over boil.

When your beans are cooked take a bean/potato masher and mash your beans.  I do this at 1 1/2 hours of cooking. You can leave the beans on simmer while doing this.

The beans do not all have to be mashed. Turn off the heat. Take a handful (1 Cup) of Dulse Seaweed and slice.


You can use less or more to taste. Now put it into the pot of beans and mix.


Looking good. Take some plastic containers with lids and divide into serving sizes of choice.


I used 2 cup Ziplock containers. They are cheap and reusable.  I put the covers on and put them into my upright freezer . When you are ready to use them. Take one out and place in bowl or sink of very hot water for 15-30 minutes. Then turn it over and into a pot and cook them on simmer until they are defrosted and hot. I stir and watch frequently.

Note: You can add more Salt or Garlic to taste. Sometimes I add diced Jalepeno' when I prepare my beans to.

Fried Plantain Recipe

You will need

Plantain ripe ( yellow and very blemished with brown spots, and soft)
Vegetable oil
salt

Take a deep pan and fill with about an inch of oil.
Turn on heat to Medium high. Peel and slice Plantain.


Place one in oil. If oil sizzles it is ready then you can put the rest of the prepared plantain in pan. Lower heat if the sizzle is to intense. Every stove is different and it is a matter of having the oil hot, but not to hot. Be careful, hot oil burns and yes, most of us are aware of this. Keep all pan handles away from you in the standing/walking area of stove top. This is a reminder for all cooking on the stove top.
I usually heat on medium high then turn it to medium for frying. Check with slotted metal utensil to see if underneath is golden and starting to brown. If so start turning them over. This only takes a few minutes.

Once both sides have become golden brown. You can take them out and place them on some paper towel to drain.

Now you want to mash them and place them back into the heating oil again.

Some people use a fork, bottom of glass bottle, spatula, ect. whatever works for you.

Do the same thing as earlier said. wait a few minutes and then check underneath for a deeper darker bronze color and then turn them over and wait for them to be the same or darker on other side. Take out and place on paper towels. Sprinkle with salt and let cool.

Quinoa and Berries Recipe

This is a healthy breakfast, snack or other meal.

The basics for serving one.

1/4 Cup Quinoa
1/2 Cup water or 1/4 Cup water and 1/4 Cup milk of choice

Put this into a small pan or pot. You can let this soak, if you like. I think it tastes better when I let it sit and soak for at least 15-30 minutes before cooking. Then bring it to a boil and lower heat to a simmer for 10 minutes. You can cover it if you like.
Now get your bowl out with spoon and add your extras. Sweetener of choice, Butter, nuts are good, or dried fruit. I love Raspberries and Blackberries in mine. Fresh or defrosted from frozen are both great.

On this day, I used raw Walnuts, Splenda, Rasberries, Blackberries and my home made Parma.

Put the cooked Quinoa in bowl and mix.

Yum. Time to eat.

Easy Parma Recipe

I eat a lot of this. It is great on Pizza in place of cheese, on top of Spaghetti and I put it in my Quinoa for breakfast.

Ingredients:

2 Cups raw Walnuts
1/2 Cup Brewers/Nutritional yeast (I use Lewis Labs)
1/2 tsp. Garlic powder
1/2 tsp. Salt

Put all in a Food Processor. Blend until it looks similar to this.


Put into container of choice with lid. Keep in fridge. Experiment with other foods. I have also used it as a Parmesan replacement for chicken coating with bread crumbs.

Maca Mocha Hot Drink Recipe

You will need:

1-3 tsp. Maca Powder
1-3 tsp. Carob Powder or Cocoa Powder (This is optional. The drink is good without this to.)
2 T. dry creamer of choice
Sweetener of choice to taste
Hot water.

Place ingredients in a mug and stir until well  blend. This helps the dry ingredients blend better into the hot water. Now add hot water and mix again until blend. When my water is to hot I will add a little Soy, Hemp, or Almond milk to cool it down a bit. Any milk or cold water will work.


Maca Powder gives a malty flavor that I love. Enjoy.
