Brussel Sprout Soup Recipe

Lots of Brussel Sprouts coming out of my garden. What to do with them? Soup anyone? This soup recipe I found on BBCFOOD bbc.co.uk/food  I did change it to my liking, but it was great inspiration.

I have pulled out one plant and kept the tender leaves closer the top. They juice great. I think that they would be great saute'd or in soup to. The big bud on top I kept and will juice or use for some kind of eating. I took the big leaves and put them in the garden to mulch (although, I do hear they are good eating to). The stem went into the compost pile, but my dog took it and has been chewing on it all week. I guess she likes brussel sprouts to. Here is another one for her. Hee. Dog chew.


Ingredients:                Serves 3-4

1/2 lb onions sliced
1-2 T. Butter or oil
1/2 lb Brussel Sprouts halved
1 potato diced
Pinch of thyme
2 cups of broth (any kind and I am sure water would be just fine) I used beef broth.
salt and pepper to taste

Optional toppings:
Sour cream, yogurt, cream
paprika or cayenne pepper

Put onions in a pot with butter/or oil, saute' for about 5 minutes and then cover and steam for another five minutes. Then take the cover off and add Brussel sprouts, potato, thyme, salt, pepper and broth. Cover, bring to a boil and then lower heat to simmer for about 10-15 minutes. Blend with hand bender and then taste. Adjust seasoning if needed. Serve hot with topping of choice and some warm bread.

I put my Brussel Sprouts, potato and thyme in a bowl to be ready for next step.



Onions looked and smelled good so, I added the bowl. I could of saute'd my onions more.

Added my broth. Now to cover, bring to a boil and simmer for 15 minutes.


Starting to blend with my hand held kitchen tool.


Now it is looking good and done.



I topped mine with cayenne and ate the soup with one of my sour dough rolls. Very good. The soup was good with out any extras on top. So, perhaps some paprika next time. To make it look pretty or not.
