Asian Rice Noodles With Peanut Sauce And Cilantro Recipe

I make this when my man is not eating dinner at home. I love fresh cilantro and am growing it in my garden. You could add warm tofu to this, but this is very satisfying on it's own. I mix everything before I eat. It is just a prettier presentation this way.

You will need:

55 grams of Rice Stick Noodles Per person (half the sauce recipe if you are serving only one)
Fresh Cilantro
Raw Sesame Seeds

Peanut sauce (serves 2 people) =
Dice 2 cloves of garlic, and 1 inch cube of fresh ginger root peeled and diced, shredded fine or on a micro plane shedder. Add to small bowl.
Add1/4 cup boiling water
2 T. Soy Sauce
2 T. Peanut butter
2 Tsp. sweet
1/2 tsp. ground coriander
1/2 tsp. vinegar or lemon juice
1/16-1/8 tsp. ground cayenne
Mix and set aside.

Heat a pot of water to a boil and then turn off the heat. Add Rice noodles and stir. Let soak for 10-15 minutes. After the noodles are soaked, drain and mix noodle with sauce in pot. Now place into serving dishes. Top with sesame seeds and fresh cilantro. Serve.

Here is a pick of the rice noodles. The package says to soak for 5-8 minutes, but I think it is to aldente for me. I got this from the Walmart Asian food section. Very cheap and a lot of noodles. If you do not have a food scale, just guess. Good luck.
