Sweet Italian Peppers saute'd in Onion and Garlic Recipe

Another easy side for dinner or lunch meals. My Sweet Italian peppers are growing beautifully in my garden. My husband likes this recipe and it is a new food to him. So I am happy about that.

Serves 2

will need:

8 Sweet Italian Peppers (you can use Anaheim Peppers as a substitute)
1/2 cup sliced onion. ( Use the amount that works for your taste)
2 large or 4 small Garlic cloves diced
Olive oil
Salt

Take a large skillet and pour some olive oil in it. Perhaps about 2 T. Slice onions and place into skillet. Chop peppers into bite size pieces and place in skillet. Sprinkle some salt into the mix in the skillet. Dice your garlic and set aside in small bowl.

Heat stove top with skillet on it, to medium/high. Saute' peppers and onion for about 10-15 minutes. Now add the garlic and cook while mixing for another 1-2 minutes. Try not to burn garlic. Lower heat if need be. Turn heat to low and you can cover until ready to serve or turn off heat and serve.

Need a little extra? Sprinkle or shred some Parmesan on top after peppers are served on plates.

Note: I think one of my sweet pepper plants got cross pollinated with a Habanero pepper and made a spicy Italian pepper. My last meal I picked a pepper from the back of my garden next to a Habanero pepper. My dish was a bit spicy, but still yummy.
